Who am I?
Hi everyone, my name is Emma, I am 44 years old, have a son and am a single mum. I used to own several restaurants in Stockholm. Now I have one left.

My journey before and with Unicity

Insulin Resistance and Cardiovascular diseases
Many people have insulin resistance without realising it. Insulin resistance means that the ability of the body's cells to respond to insulin is impaired and does not work properly. Insulin helps release glucose/sugar into the body's cells and when it doesn't work, we get high levels of sugar in the blood.
There is a way to find out if you have insulin resistance. If you take a blood sample and have the values of triglycerides (blood fat) and HDL cholesterol (the good cholesterol) then you can calculate a ratio between these values (see picture below).
If the value is below 1.5 you have good insulin sensitivity, if the value is between 1.5 - 3.0 you are at risk of insulin resistance and if the value is above 3.0 you have insulin resistance.
Many people are also at risk of future cardiovascular disease, which is the most common disease in Sweden and the world.
There is a way to find out if you are at risk of cardiovascular disease. If you take a blood test and have the values of LDL cholesterol and HDL cholesterol, you can calculate a ratio between these values (see picture below).
If the value is below 1.5, you have no greater risk of cardiovascular disease, if the value is between 1.5 - 3.0, you have an elevated risk and if the value is above 3.0, you have a high risk.

The hormone insulin is produced in the pancreas and its job is to release glucose/sugar into the body's cells. When the cell stops responding/acting to the insulin, insulin resistance occurs and the glucose is not released into the cell but remains in the blood. Insulin resistance begins in fat cells and when fat cells become insulin resistant, they begin to spread it throughout the body to, for example, the liver and muscle cells. Then the liver and muscle cells become insulin resistant. When insulin levels are high in the body, the fat cells have to grow. When fat cells grow, they become either larger or more numerous.

Lowering blood sugar levels in the body also lowers insulin levels. One way to focus on eating fibre (dietary fibre). When fibre levels are high in the diet, blood sugar will be kept low. When blood sugar is low, insulin levels are also low.

2. Burning fat in the body
